Sand Dollars and Pearls Wedding Cake

La Valencia Hotel's Veranda Room & Terrace was the setting for Jessica & Nick's wedding reception. The silver and pearlized white color scheme glistened with elegance! The cake was a perfect reflection of the theme and decor. Nine hundred silver pearls (fondant) were hand placed to create the bubbling effect. Gorgeous pearlized 3" sand dollars (fondant) surround the base of this dazzling cake!

The Special Event 2009 Wedding Cake

By invitation only, dazzleM designed this classy cake for the international gathering of Event Planners: "The Special Event" ["TSE"], held at the San Diego Convention Center, with the Gala Wedding Luncheon just across the street at the ubermodern Hard Rock Hotel. The Wedding Cake Gallery featured cakes created by eight top-notch designers.

TSE 2009 Wedding Cake ~ Details

Cake as fashion was the theme for the Cake Gallery. Chef Jen's cake featured ivory, chocolate, red and aquamarine and white fondant, some patterened with a lace motif, gilded with 24k gold, then festooned with large white gumpaste magnolias, also gilded with 24k gold. Cake floated above the silver cake plateau on an aqua fondant base, then surrounded by fresh magnolia leaves. The Cake Topper (image above) is a real shell beautifully decorated with Swarovski crystals. Topper available at The Poached Pear in Del Mar.

TSE 2009 Wedding Cake

Chef Jen's dazzling cake on display, with riotious photo collage by Photographer Sara France playing in the background. It depticted a bridal couple demuerely cutting and tasting their cake and then slowing progressed into an all out food fight; images set to hip music. This feature created a fabulously fun environment for convention attendees to stroll through and view the cake gallery!

TSE 2009 Wedding Luncheon

Hard Rock Hotel Ballroom is all decked out for the Wedding Luncheon ticketed event. Chef Jen furnished generous slices of French Orange Pound Cake, filled with luscious chocolate ganache and orange zest and Grand Marnier Swiss Meringue buttercream as part of the dessert service for attendees. Tilting Tiers Wedding Cake

Chef Jen's interpretation of this versatile and happy design was done under the tutelage of NYC wedding cake and sugar flower maestro, RON BEN-ISRAEL. The sugar flowers were hand-made by Jen, petal by petal. Cake was on display at The Bridal Bar in La Jolla.

Hand-made Sugar Rose

Jen's sugar roses captured great color that intensified in the center of the blossom. The outer petals curl in natural ways making these blossoms appear as "just plucked" from the rose garden.

Hand-made Sugar Peony

Jen's sugar peony, in a gorgeous fuchsia color, is almost six inches across. It serves as the topper for the Topsy-turvy cake above.

The elegant cake atop the silver cake plateau was featured on a round table all aglow with white lights, candles and adorned with red rose petals and seasonal accessories in siver and red.

Twenty-two Degrees of Separation Wedding Cake

Shining & Stunningl! The couple chose a lime zest cake, flavor enhanced with Lemoncello, with fillings of lime zest curd and white chocolate cream. The Swiss meringue buttercream icing was flavor enhanced with Lemoncello: Sensational YUM factor!

Twenty-two Degrees of Separation Wedding Cake

The effect: tiers set at a 22.5 degree angle; festooned with the shimmering crystal Monogram; surrounded by oodles of flowers; ringed with navy blue satin ribbons; sitting atop a navy blue satin tablescape. This cake captured the luxurious style of Heidi and Mike's wedding at the Aragon Ballroom in the Rancho Bernardo Inn & Spa.

Shades of Pink

The Rancho Bernardo Inn provided the backdrop for Bride Karen's shades of pink rose fantasy cake. The couple chose a delicious flavor combo: each tier was two layers of red velvet cake bookending one layer of banana walnut cake. Layers were brushed with (dark) Godiva chocolate simple syrup, the filling was cream cheese buttercream. The cake's exterior was iced with a Swiss Meringue buttercream flavored with Godiva white chocolate liqueur. This delicious cake was enhanced with edible "drifting" fondant rose buds.

Large, colorful hibiscus, plumeria and leaves on white fondant. The base of each tier is surrounded by a "lei" of handmade flowers: pink and orange hibiscus and white plumeria. Perfect for a summer reception, this cake was lemon zest with two fillings: creamy lemon curd and fig in mascarpone cream. Stunning to see; refreshing to eat!

Yes, everything is edible! The pair of handmade butterflies are chocolate fondant bodies with colored wings from sugared rice paper. Bumble bees are bright yellow & black fondant with wings from sugared rice paper. Tiny lady bugs are from fondant. Flowers (roses, snap dragons, violas) are real, organic, flavored, crystallized with sugar and are totally edible.

First Anniversary surprise from the bride's Mom -- the couple had missed getting to taste their wedding cake. The Maui Ritz Carlton Resort graciously supplied its signature recipe, which was replicated by dazzleM in this special gift.

Invitation 60th Anniversary

This Diamond Anniversary party invitation, designed by a graphic artist and daughter-in-law of the couple being celebrated, inspired the design for the cake (below).

Diamond (60th) Anniversary Cake

Cake created to mimic the invitation (see just below). Bottom tier was chocolate fudge; top tier was white poppy seed cake with fresh raspberries. The top tier was covered in white fondant; with 60 piped and painted "diamonds" encircling it.
